Description

A tasty and easy meal that combines sweet and tangy flavors, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 1/4 cup honey
  • 1/4 cup mustard
  • 1 tablespoon olive oil
  • 1 cup rice
  • 2 cups water
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. In a bowl, mix honey, mustard, olive oil, salt, and pepper to create the marinade.
  2. Coat the chicken breasts with the marinade and let it sit for at least 30 minutes.
  3. In a saucepan, bring water to a boil and add rice. Reduce heat, cover, and simmer for 15-20 minutes.
  4. Meanwhile, heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until cooked through.
  5. Serve the chicken over a bed of rice and garnish with chopped parsley if desired.

Notes

For richer flavor, marinate the chicken overnight. You can also use chicken thighs for a juicier option.
