Ingredients
- 2 chicken breasts
- 1/4 cup honey
- 1/4 cup mustard
- 1 tablespoon olive oil
- 1 cup rice
- 2 cups water
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a bowl, mix honey, mustard, olive oil, salt, and pepper to create the marinade.
- Coat the chicken breasts with the marinade and let it sit for at least 30 minutes.
- In a saucepan, bring water to a boil and add rice. Reduce heat, cover, and simmer for 15-20 minutes.
- Meanwhile, heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until cooked through.
- Serve the chicken over a bed of rice and garnish with chopped parsley if desired.
Notes
For richer flavor, marinate the chicken overnight. You can also use chicken thighs for a juicier option.
