Description

A delightful side dish celebrating the natural sweetness of beets and carrots.


Ingredients

  • 4 medium beets, peeled and cut into wedges
  • 4 medium carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the beets and carrots.
  3. Drizzle olive oil and honey over the vegetables, then season with salt and pepper.
  4. Toss everything together until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, stirring halfway through.
  7. If desired, sprinkle with fresh thyme or rosemary before serving.
