Ingredients
- 4 medium beets, peeled and cut into wedges
- 4 medium carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 2 tablespoons honey
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the beets and carrots.
- Drizzle olive oil and honey over the vegetables, then season with salt and pepper.
- Toss everything together until the vegetables are evenly coated.
- Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, stirring halfway through.
- If desired, sprinkle with fresh thyme or rosemary before serving.
Notes
Cut the vegetables into evenly sized pieces for even cooking. Consider adding a squeeze of lemon juice or experimenting with different herbs for added flavor.
