Ingredients
- 1 cup Cold Butter (or margarine for dairy-free)
- 1 cup Brown Sugar (light or dark)
- 1/2 cup White Sugar (or coconut sugar)
- 2 large Eggs (or flax eggs for vegan)
- 1 teaspoon Vanilla Extract
- 2 cups Flour (or gluten-free blend)
- 1 cup Graham Crackers (crushed)
- 1 tablespoon Cornstarch
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 8 ounces Cream Cheese (or dairy-free cream cheese for vegan)
- 2 cups Powdered Sugar (adjust for sweetness)
- 1 cup Graham Crackers (for streusel)
- 1/4 cup Melted Butter (or coconut oil for dairy-free)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Cream together cold butter, brown sugar, and white sugar until smooth.
- Add eggs and vanilla extract, mixing well until combined.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- In another bowl, beat the cream cheese until smooth, then gradually mix in powdered sugar until creamy.
- Fold the cream cheese mixture into the cookie dough until fully incorporated.
- Scoop dough onto the prepared baking sheet, leaving space between each cookie.
- For the streusel, combine crushed graham crackers with melted butter and sprinkle over cookie dough.
- Bake for 12-15 minutes until lightly golden around the edges.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
