Description

Ingredients

  • 3/4 cup (150 gr) sugar
  • 3 large eggs
  • 1 large lemon, zest and juice
  • 1/4 cup (60 ml) milk
  • 4 oz (115 gr) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups (240 gr) all-purpose flour
  • 1 pinch salt
  • 1 1/2 teaspoons baking powder


Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a large bowl, beat the sugar and eggs together until well combined.
  3. Add the lemon zest and juice, milk, melted butter, and vanilla extract. Beat again until well mixed.
  4. Sift the flour, salt, and baking powder into the bowl, and mix until just combined.
  5. Pour the batter into a loaf baking pan lined with parchment paper or greased well.
  6. Bake for 30-35 minutes or until set; check with a toothpick.
  7. Let the cake cool down, sprinkle with powdered sugar, and enjoy!

Notes

For a more intense lemon flavor, increase the amount of lemon zest. Use room temperature ingredients for better mixing. Avoid overmixing the batter after adding flour.
