Description
A simple, warm meal made with slow-roasted beef and sweet onions, perfect for weeknights or a slow Sunday dinner.
Ingredients
- 3-4 pounds beef pot roast
- 2 large onions, sliced
- 1 cup beef broth
- 1 packet onion soup mix
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh thyme (optional, for garnish)
Instructions
- Preheat the oven to 325°F (163°C).
- In a large oven-safe pot or Dutch oven, heat some oil over medium-high heat. Season the beef roast with salt and pepper, then sear it on all sides until browned.
- Remove the roast and set it aside. In the same pot, add sliced onions and cook until soft. Add garlic and cook for another minute.
- Stir in the beef broth, onion soup mix, and Worcestershire sauce.
- Return the roast to the pot, cover, and place it in the oven.
- Roast for about 3-4 hours, or until the meat is fork-tender.
- Serve hot, garnished with fresh thyme if desired.
Notes
Brown the roast well for best taste. Use low oven heat and give time to slow cook for tender meat.
