Description

A simple, warm meal made with slow-roasted beef and sweet onions, perfect for weeknights or a slow Sunday dinner.


Ingredients

  • 3-4 pounds beef pot roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large oven-safe pot or Dutch oven, heat some oil over medium-high heat. Season the beef roast with salt and pepper, then sear it on all sides until browned.
  3. Remove the roast and set it aside. In the same pot, add sliced onions and cook until soft. Add garlic and cook for another minute.
  4. Stir in the beef broth, onion soup mix, and Worcestershire sauce.
  5. Return the roast to the pot, cover, and place it in the oven.
  6. Roast for about 3-4 hours, or until the meat is fork-tender.
  7. Serve hot, garnished with fresh thyme if desired.

Notes

Brown the roast well for best taste. Use low oven heat and give time to slow cook for tender meat.
