Description
A quick and low carb pudding made with chia seeds, almond milk, and fresh ginger, perfect for a nutritious snack.
Ingredients
- 3 tablespoons chia seeds
- 1 cup unsweetened almond milk (or coconut milk)
- 1 teaspoon fresh grated ginger
- 1 tablespoon erythritol or monk fruit sweetener (optional)
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt
- Optional toppings: extra ginger, crushed nuts, coconut flakes
Instructions
- Warm the almond milk in a small pot, avoiding boiling.
- Add the grated ginger and sweetener; stir until fully dissolved.
- Remove from heat and let cool for 1-2 minutes.
- Stir in chia seeds and a pinch of salt well to prevent clumping.
- Pour into a jar or bowl and chill in the fridge for at least 2 hours or overnight.
- Stir again before serving and add desired toppings.
Notes
For a creamier version, use full-fat coconut milk. Serve with low carb fruits for added flavor.
