Description

Delightful cookies with crunchy pecans, chewy oats, and rich chocolate, perfect for gatherings or cozy nights in.


Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 cups old-fashioned rolled oats
  • 2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans


Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream the softened butter and both sugars together for 2-3 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients, stirring until just combined.
  5. Fold in the oats, chocolate chips, and pecans until evenly distributed.
  6. Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are golden and centers look slightly underdone.
  8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For chewier cookies, do not over-bake. Store in an airtight container for up to a week or freeze for up to three months.
