Description

A soft and fruity cake infused with real mango puree, perfect for parties or a cozy day at home.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup mango puree
  • 3/4 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the mango puree and vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Divide the batter evenly between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Frost with mango or vanilla frosting and serve.

Notes

Use ripe mangoes for best flavor and ensure your eggs and milk are at room temperature for a smooth batter.
