Description

A delightful dish featuring earthy beets and sweet carrots, roasted to perfection with a maple syrup glaze.


Ingredients

  • 4 medium-sized beets, peeled and cut into wedges
  • 4 large carrots, peeled and sliced into thick rounds
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • Optional: Crumbled goat cheese for serving


Instructions

  1. Set your oven to 400°F (200°C) to ensure it’s hot enough for roasting.
  2. Peel and cut the beets into wedges and slice the carrots into thick rounds.
  3. In a large mixing bowl, combine the olive oil, maple syrup, sea salt, black pepper, and thyme. Whisk until well blended.
  4. Add the beets and carrots to the bowl. Toss them in the sauce until they are evenly coated.
  5. Spread the coated vegetables in a single layer on a large baking sheet.
  6. Place the baking sheet in the preheated oven. Roast for 30-35 minutes, stirring halfway through, until tender and caramelized.
  7. Remove from the oven and let them sit for a few minutes before serving.

Notes

These roasted vegetables can be served with grilled meats or as part of a salad. Sprinkling crumbled goat cheese adds a tangy contrast.
