Description

These Maple Roasted Carrots are tender, caramelized, and coated in a sweet maple glaze. A simple yet elegant holiday side dish that’s ready in under 40 minutes, perfect for family dinners and festive gatherings.


Ingredients

  • 2 pounds carrots, peeled and cut into sticks
  • 2 tbsp olive oil or melted butter
  • 3 tbsp pure maple syrup
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme or rosemary (optional)
  • Flaky sea salt for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss carrots with olive oil, maple syrup, salt, pepper, and herbs if using.
  3. Spread in a single layer on the baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
  5. Transfer to a serving dish, drizzle with extra glaze, and sprinkle with flaky sea salt if desired.

Notes

  • Baby carrots can be used instead of whole carrots, reducing roasting time slightly.
  • Add a pinch of smoked paprika or chili flakes for a hint of heat.
  • For a vegan version, use olive oil instead of butter.
