These Maple Roasted Carrots are tender, caramelized, and coated in a sweet maple glaze. A simple yet elegant holiday side dish that’s ready in under 40 minutes, perfect for family dinners and festive gatherings.
Ingredients
- 2 pounds carrots, peeled and cut into sticks
- 2 tbsp olive oil or melted butter
- 3 tbsp pure maple syrup
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme or rosemary (optional)
- Flaky sea salt for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss carrots with olive oil, maple syrup, salt, pepper, and herbs if using.
- Spread in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
- Transfer to a serving dish, drizzle with extra glaze, and sprinkle with flaky sea salt if desired.
Notes
- Baby carrots can be used instead of whole carrots, reducing roasting time slightly.
- Add a pinch of smoked paprika or chili flakes for a hint of heat.
- For a vegan version, use olive oil instead of butter.
