Description

A delightful dish featuring tender chicken, sun-dried tomatoes, and a creamy sauce, perfect for romantic dinners or special family meals.


Ingredients

  • 2 large boneless, skinless Chicken Breasts, sliced thinly
  • Salt and Pepper, to taste
  • 2 tbsp Olive Oil, for searing
  • 3 cloves Garlic, minced
  • 1/3 cup Sun-Dried Tomatoes, chopped
  • 1/2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 tsp Italian Seasoning
  • 1/2 tsp Crushed Red Pepper Flakes (optional)
  • 8 oz Pasta (penne, rigatoni, or fettuccine)
  • Fresh Basil, for garnish


Instructions

  1. Cook the Pasta: Boil water in a large pot, add a pinch of salt and pasta. Cook until al dente, drain and set aside.
  2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, cook for 5-7 minutes until golden brown. Remove and set aside.
  3. Make the Sauce: In the same skillet, sauté minced garlic for 1 minute. Add sun-dried tomatoes, chicken broth, and bring to a simmer. Stir in heavy cream, Parmesan, Italian seasoning, and crushed red pepper flakes. Cook until slightly thickened.
  4. Combine: Add cooked chicken back to the skillet and mix in drained pasta until evenly coated.
  5. Garnish and Serve: Serve warm, garnished with fresh basil.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet adding a splash of broth or cream if needed.
