Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 oz pasta (such as fettuccine or penne)
  • Fresh basil, for garnish


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and add the chicken. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
  3. In the same skillet, add the sun-dried tomatoes and garlic, sautéing for about 2 minutes.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  5. Add the Parmesan cheese and stir until melted and the sauce is creamy.
  6. Slice the chicken and return it to the skillet. Stir in the cooked pasta, ensuring everything is coated in the sauce.
  7. Serve hot, garnished with fresh basil.

Notes

For a lighter version, use half-and-half instead of heavy cream. You can add spinach or mushrooms for extra flavor.
