Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 oz pasta (such as fettuccine or penne)
- Fresh basil, for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and add the chicken. Cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add the sun-dried tomatoes and garlic, sautéing for about 2 minutes.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add the Parmesan cheese and stir until melted and the sauce is creamy.
- Slice the chicken and return it to the skillet. Stir in the cooked pasta, ensuring everything is coated in the sauce.
- Serve hot, garnished with fresh basil.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can add spinach or mushrooms for extra flavor.
