Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 8 ounces fettuccine or pasta of choice
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- Fresh basil for garnish (optional)
- Crushed red pepper flakes (optional, for spice)
Instructions
- Boil water in a large pot and add a pinch of salt. Cook pasta according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear chicken for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- Add minced garlic to the same skillet, sautéing for about one minute until fragrant.
- Stir in chopped sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and chicken broth, stirring until well combined. Bring to a gentle simmer.
- Gradually whisk in grated Parmesan cheese, allowing the sauce to thicken slightly.
- Slice the cooked chicken and return it to the skillet. Add spinach and cooked pasta, tossing everything in the creamy sauce.
- Adjust seasoning with Italian seasoning, salt, and pepper as needed.
- Heat everything together for an additional 2-3 minutes until well combined.
Notes
For a vegetarian variation, replace chicken with chickpeas or tofu. Use freshly grated Parmesan cheese for the best flavor. Serve with side salad or garlic bread.
