Description

A creamy pasta dish filled with sun-dried tomatoes and garlic, perfect for a cozy dinner or a romantic evening.

Ingredients

  • 1 and 1/2 tablespoons butter
  • 4 cloves of garlic, grated
  • 2 cups light cream
  • 1 cup fresh grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes + 1 tablespoon oil from the jar
  • 1 tablespoon finely chopped fresh basil
  • 2 teaspoons chicken bouillon powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper
  • 3/4 box of thin linguini or another long noodle of your choice
  • Reserved pasta water

Instructions

  1. Chop the sun-dried tomatoes finely and blend them with their oil to make a coarse paste.
  2. Bring salted water to a boil and cook the noodles, reserving about 1/4 cup of the pasta water.
  3. Melt butter in a non-stick pan over medium heat, add garlic, crushed red pepper, dried thyme, and chicken bouillon powder, cooking for 1 minute.
  4. Pour in the light cream and heat for 5 minutes without boiling.
  5. Add Parmesan cheese, sun-dried tomato paste, salt, pepper, garlic powder, and fresh basil; stir and simmer for 5-7 minutes, adding reserved pasta water as needed.
  6. Add cooked noodles and stir to coat.
  7. Turn off the heat and serve, garnishing with additional Parmesan cheese.
