Description

These cookies are soft and rich, combining marshmallows and chocolate chips for a melt-in-your-mouth treat, perfect for snacks or parties.


Ingredients

  • 1 ¾ cups (220 g) all-purpose flour
  • 1/2 cup (40 g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (100 g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup (90 g) semi-sweet chocolate chips
  • 1 cup (50 g) mini marshmallows
  • 1/3 cup (60 g) marshmallow fluff (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugar until light and fluffy (2–3 minutes).
  4. Beat in the egg and vanilla until fully combined.
  5. Gradually add dry ingredients to wet ingredients in 2–3 batches, mixing until just combined.
  6. Gently fold in semi-sweet chocolate chips.
  7. Fold in mini marshmallows and optional marshmallow fluff, avoiding overmixing.
  8. Scoop dough onto prepared baking sheets, spacing 2 inches apart, and bake for 8–10 minutes until edges are set and centers are soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best results, serve warm and store in an airtight box. You can freeze the cookies for longer storage or chill the dough for later use.
