Description

Delicious cookies combining earthy matcha and sweet white chocolate, perfect for any occasion.


Ingredients

  • 180 g all-purpose flour
  • 1 tablespoon matcha powder (ceremonial grade or high-quality culinary grade)
  • 1 tablespoon milk powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 150 g granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 100 g white chocolate (roughly chopped, plus a handful extra for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Set it aside.
  2. In a small bowl, stir together the flour, matcha powder, milk powder, baking powder, baking soda, and salt. Set this mixture aside.
  3. In a large mixing bowl, use an electric hand mixer to beat the softened butter until it becomes very creamy. Add the sugar and continue to mix until the mixture is fluffy and well combined, about 3-4 minutes.
  4. Add the egg and vanilla extract to the butter mixture and mix again until everything is well combined.
  5. Gradually add the flour mixture into the butter mixture. Mix briefly with the hand mixer until you see some flour patches left.
  6. Add the chopped white chocolate and gently fold the dough together with a silicone spatula until it is just combined. Be careful not to overmix.
  7. Using a 4-tablespoon ice cream scooper, scoop out balls of cookie dough and place them on your baking sheet, leaving about 2 inches between each cookie for spreading.
  8. Bake the cookies for 12-14 minutes or until the edges are set but the center is still soft. In the last 2 minutes of baking, you can press a few extra chunks of white chocolate on top of each cookie if you like.
  9. Let the cookies cool on the baking sheet for 10 minutes before carefully transferring them to a wire rack to cool completely.

Notes

Best enjoyed warm with a cup of tea or coffee. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
