Description

Delightful and visually appealing Mexican Pink Cookies with a soft texture, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon salt
  • 2 cups all-purpose flour
  • Pink or red food coloring
  • Granulated sugar for sprinkling


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 13 x 9 baking sheet with parchment paper.
  2. Beat together the softened butter and powdered sugar until creamy.
  3. Add in the vanilla extract, salt, and food coloring, then mix well.
  4. Gradually combine in the all-purpose flour until just mixed.
  5. Using a dough scoop, make two tablespoon-sized balls and roll them between your hands.
  6. Place the cookies 3 inches apart on the prepared baking sheet (about 8 cookies per sheet).
  7. Flatten each cookie dough ball to a ½ inch thickness.
  8. Bake the cookies for 13-15 minutes.
  9. Immediately sprinkle baked cookies with granulated sugar.

Notes

For softer cookies, slightly underbake them. You can add chocolate chips or nuts for a variation.
