Description

A delightful no-bake dessert that’s light, creamy, and packed with fresh blackberry flavor, perfect for any occasion.


Ingredients

  • 1 cup chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 1/2 cup blackberry puree
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin
  • 2 tablespoons cold water
  • 1/2 cup white chocolate, melted
  • Fresh berries for garnish
  • Edible violets for decoration


Instructions

  1. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  2. In a separate bowl, whip the heavy cream until stiff peaks form.
  3. In another bowl, mix the blackberry puree, sugar, and vanilla extract.
  4. Dissolve the gelatin in cold water and then gently heat until melted. Stir into the blackberry mixture.
  5. Fold the whipped cream into the blackberry mixture until well combined.
  6. Pour the blackberry mousse over the crust and smooth the top. Refrigerate for at least 240 minutes or until set.
  7. To make the glaze, heat melted white chocolate and pour it over the set mousse.
  8. Decorate with fresh berries and edible violets before serving.

Notes

Use fresh blackberries for the puree for the best flavor. Let the cake sit in the fridge longer for better setting.
