Ingredients
- 1 1/2 cups gingerbread cookies (crushed)
- 1/4 cup unsalted butter (melted)
- 1 1/2 cups cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 1/4 cups heavy cream (whipped to stiff peaks)
- Whipped cream (for topping)
- Crushed gingerbread cookies (for garnish)
- Mini gingerbread men cookies (for decoration)
- Ground cinnamon (for dusting)
Instructions
- In a bowl, mix the crushed gingerbread cookies with melted butter until well combined. Press this mixture into the bottom of small cups or glasses to form the crust.
- In a large mixing bowl, beat the softened cream cheese with powdered sugar, vanilla extract, ground ginger, ground cinnamon, ground nutmeg, and ground cloves until smooth and creamy.
- Gently fold the whipped heavy cream into the cream cheese mixture until well blended. Spoon or pipe the cheesecake filling over the gingerbread crust in each cup.
- Place the assembled cups in the refrigerator for at least 2-3 hours or until set.
- Once chilled, top each cup with whipped cream, crushed gingerbread cookies, mini gingerbread men cookies, and a sprinkle of ground cinnamon.
