Description

A cool and easy no-bake treat featuring sweet strawberries and creamy cheese, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs (about 16 full cracker sheets)
  • Pinch of salt
  • ¼ cup packed light or dark brown sugar
  • ½ cup butter, melted
  • 16 ounces full-fat cream cheese
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy whipping cream
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 1 ½ lbs strawberries, hulled and chopped small
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice


Instructions

  1. To prepare the crust: In a bowl, mix graham cracker crumbs, salt, and brown sugar. Pour in melted butter and combine until crumbs are wet. Press into the bottom of an 8×8 inch pan and chill.
  2. To prepare the filling: Beat cream cheese until smooth, then add sugar and vanilla and beat again. Whip heavy cream to soft peaks and fold it into the cream cheese mixture. Spread over the chilled crust and smooth the top. Chill for 1 hour.
  3. To make the topping: Cook strawberries, sugar, lemon juice, water, and cornstarch in a pot over medium heat until thickened (about 5 to 8 minutes). Cool, then spread over the filling.
  4. Chill the entire pan for at least 2 hours before serving.
  5. To serve, cut bars using a hot knife and serve cold with a fresh strawberry on top if desired.

Notes

Use full-fat cream cheese for a richer taste. Press the crust down firmly for a better base.
