Description
A comforting beef stew that cooks slowly in a crock pot, filled with tender beef, carrots, potatoes, and a rich broth. Perfect for cold nights!
Ingredients
- 2 lbs beef chuck, cubed
- 4 carrots, sliced
- 3 potatoes, cubed
- 3 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 3 tbsp flour
- 2 tsp salt
- 1 tsp pepper
- 1 tsp thyme
- 1 tsp rosemary
- 2 bay leaves
Instructions
- Trim the beef if needed and coat in flour, salt, and pepper. Brown in olive oil (optional).
- Add beef, vegetables, garlic, and seasonings to the crock pot.
- Stir in tomato paste and beef broth.
- Cook on Low for 8–9 hours or on High for 4–5 hours until the beef is tender.
- Remove bay leaves and serve hot.
Notes
For a different flavor, consider adding a cup of red wine with the broth or using sweet potatoes instead of white potatoes.
