Description

A comforting beef stew that cooks slowly in a crock pot, filled with tender beef, carrots, potatoes, and a rich broth. Perfect for cold nights!


Ingredients

  • 2 lbs beef chuck, cubed
  • 4 carrots, sliced
  • 3 potatoes, cubed
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 3 tbsp flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp thyme
  • 1 tsp rosemary
  • 2 bay leaves


Instructions

  1. Trim the beef if needed and coat in flour, salt, and pepper. Brown in olive oil (optional).
  2. Add beef, vegetables, garlic, and seasonings to the crock pot.
  3. Stir in tomato paste and beef broth.
  4. Cook on Low for 8–9 hours or on High for 4–5 hours until the beef is tender.
  5. Remove bay leaves and serve hot.

Notes

For a different flavor, consider adding a cup of red wine with the broth or using sweet potatoes instead of white potatoes.
