A delightful multi-layered dessert combining almond sponge, coffee syrup, and chocolate ganache, perfect for special occasions.
Ingredients
- 1 cup almond flour
- 4 eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup brewed coffee
- 8 oz dark chocolate, chopped
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
- 1/4 cup sugar for syrup
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together almond flour, eggs, and granulated sugar until well combined.
- Fold in melted butter and mix until smooth.
- Spread the batter onto a baking sheet and bake for 15-20 minutes until golden.
- Let the sponge cool and cut into layers.
- Prepare the coffee syrup by mixing brewed coffee with sugar until dissolved.
- For ganache, heat heavy cream and pour over chopped dark chocolate, stirring until melted.
- Assemble the cake by layering sponge, brushing each layer with coffee syrup, and adding ganache between the layers.
- Top with whipped cream or ganache, dust with cocoa powder, and chill before serving.
- Serve chilled, cut into squares or slices.
Notes
Store leftovers in the refrigerator. Best enjoyed within 3-4 days. Allow ganache to cool slightly before using to layer.
