Description

This bright and fragrant cake features the warm notes of orange and cardamom, making it perfect for a small gathering or a cozy snack.


Ingredients

  • 1 cup olive oil
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup orange juice
  • Zest of 2 oranges
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, whisk together the olive oil and granulated sugar until combined.
  3. Add eggs one at a time, mixing well after each addition. Stir in orange juice and zest.
  4. In another bowl, combine flour, baking powder, baking soda, ground cardamom, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
  9. Dust with powdered sugar if desired before serving.

Notes

For added crunch, consider mixing in 1/2 cup of chopped nuts or replacing cardamom with 1 teaspoon of cinnamon for a warm spice note.
