Description
This light and moist cake combines olive oil and fresh orange for a bright flavor, perfect as a snack or for small gatherings.
Ingredients
- 1 cup olive oil
- 1 cup sugar
- 3 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the olive oil and sugar until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the orange juice, orange zest, and vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
