Description

This light and moist cake combines olive oil and fresh orange for a bright flavor, perfect as a snack or for small gatherings.


Ingredients

  • 1 cup olive oil
  • 1 cup sugar
  • 3 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the olive oil and sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange juice, orange zest, and vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use good olive oil for the best flavor. Do not overmix the batter and allow the cake to cool completely before slicing.
