Description

A light and moist cake made with bright orange flavor and good olive oil, perfect for a quick sweet treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1 cup orange juice
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 orange
  • 1 cup mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the olive oil and sugar until well combined. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the orange juice and zest.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the mascarpone frosting, blend the mascarpone, powdered sugar, and vanilla extract until smooth. Spread over the cooled cake before serving.

Notes

Use fresh orange juice and zest for the best taste. Do not over mix the batter. Let the cake cool before spreading the mascarpone.
