Description
A light, moist cake with bright orange flavor, using olive oil for a soft crumb.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup olive oil
- 3 large eggs
- 1 cup freshly squeezed orange juice
- Zest of 1 orange
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- Powdered sugar for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the eggs, olive oil, orange juice, and orange zest until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes in the pan, then remove and cool completely on a wire rack.
- Dust with powdered sugar before serving.
Notes
Use fresh orange juice and zest for the best taste. Do not overmix. Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
