Description

A soft and cool seed pudding that you prepare the night before for a quick and healthy breakfast or snack.


Ingredients

  • 1/2 cup chia seeds
  • 2 cups almond milk (or any milk you like)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Fresh fruits for topping (berries, banana, mango)
  • Nuts or seeds for topping (optional)


Instructions

  1. In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla. Stir well to prevent clumping.
  2. Cover the bowl and refrigerate overnight or for at least 4 hours until the chia seeds have soaked and thickened the mixture.
  3. In the morning, stir the pudding well.
  4. Spoon the pudding into a bowl or jar, and top with fresh fruit and nuts. Serve cold or let it sit for 10 minutes to warm slightly.

Notes

Store in a sealed jar in the fridge for up to 4 days. Adjust sweetness to taste, and add more milk if pudding is too thick.
