Description

Delightful cookies with a tropical twist, featuring caramelized pineapple and cherries. Perfect for parties or sweet treats at home.


Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • Cherries for garnish


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the creamed mixture.
  6. Fold in the crushed pineapple gently.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
  8. Press a cherry into the center of each cookie.
  9. Bake for 12-15 minutes or until the cookies are golden brown.
  10. Let cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For added flavor, use fresh pineapple. You can also reduce the sugar for less sweetness or add nuts for a crunch.
