Description

Moist, spiced cupcakes with rich pumpkin flavor, espresso undertones, and a creamy latte-inspired frosting—these Pumpkin Spice Latte Cupcakes are the perfect cozy fall treat for gatherings or quiet afternoons.


Ingredients

For the Cupcakes:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 ½ tsp espresso powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ⅛ tsp ground cloves
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • 1 tsp vanilla extract
  • ½ cup milk

For the Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp espresso powder
  • 1 tsp vanilla extract


Instructions

  1. Preheat Oven: Set to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, espresso powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. Cream Butter & Sugar: In a large bowl, beat butter and brown sugar until light and fluffy.
  4.  Add Eggs & Pumpkin: Beat in eggs one at a time, then mix in pumpkin purée and vanilla extract.
  5. Combine Wet & Dry: Gradually add dry ingredients, alternating with milk, until just combined. Avoid overmixing.
  6. Bake: Fill liners ⅔ full and bake 18–22 minutes, or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
  7. Make Frosting: Beat cream cheese and butter until smooth. Mix in powdered sugar, espresso powder, and vanilla until fluffy.
  8. Frost & Garnish: Pipe or spread frosting on cooled cupcakes. Optional: dust with cinnamon or garnish with a mini cinnamon stick.

Notes

  • For a stronger coffee flavor, increase espresso powder in both batter and frosting.
  • Store unfrosted cupcakes at room temperature for 2 days; store frosted cupcakes in the fridge for up to 4 days.
  • Cupcakes can be frozen (unfrosted) for up to 2 months.
