- 3 large eggs
- 1 tbsp vanilla extract
- 1 1/3 cup buttermilk (320g, mix 1 1/3 cup whole milk with 4 tsp vinegar or lemon juice)
- 2 tsp vinegar
- 1 tbsp gel red food color
- 1/4 cup boiling water (60g)
- 2 1/2 tbsp Dutch processed cocoa powder (15g)
- 3 cups all-purpose flour (390g)
- 1/4 cup cornstarch (30g)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 1/4 cup unsalted butter, softened (283g)
- 20 oz cream cheese, room temperature (570g)
- 1 tsp vanilla extract
- 1/2 tsp salt
- 3-4 cups icing sugar, sifted (360 to 480g)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together the sugar, vegetable oil, and melted butter until well combined.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, mix the buttermilk, vinegar, and red food color.
- Alternate adding the buttermilk mixture and the dry ingredients to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour in the boiling water and mix until smooth.
- Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the cream cheese frosting, beat the softened butter and cream cheese together until smooth and creamy.
- Add in the vanilla extract and salt, mixing well.
- Gradually add the sifted icing sugar until you reach your desired sweetness and thickness.
- Assemble the cake by placing one layer on a serving platter, spreading frosting on top, placing the second layer on top, and frosting the entire cake.
Notes
For a fun twist, try adding a layer of chocolate ganache or experimenting with different flavors.
