A delicious and healthy salad combining sweet and earthy flavors, featuring roasted beets, sweet potatoes, and feta cheese.
Ingredients
- 2 medium beets, roasted and diced
- 1 large sweet potato, peeled and diced
- 4 cups mixed greens
- 1/2 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the diced sweet potato with olive oil, salt, and pepper, and roast on a baking sheet for about 25-30 minutes, or until tender.
- Roast the beets by wrapping them in foil and placing them in the oven for about 45 minutes, or until easily pierced with a fork. Once cool, peel and dice them.
- In a large bowl, combine the mixed greens, roasted sweet potatoes, roasted beets, feta cheese, and walnuts.
- Drizzle with balsamic vinegar and a bit more olive oil, then toss to combine. Serve immediately.
Notes
Store leftover salad in an airtight container. Best eaten within 2-3 days; keep dressing separate until serving.
