Description

Ingredients

  • 3 medium beets
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Fresh herbs (like thyme or rosemary) for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets and sweet potatoes well. Peel them if you like, then cut them into cubes.
  3. In a large bowl, combine the cubed beets and sweet potatoes. Drizzle with olive oil, and sprinkle with salt and pepper. Toss until everything is well coated.
  4. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the oven for about 25-30 minutes, or until they are tender and slightly caramelized. Stir halfway through for even roasting.
  6. Remove from the oven and garnish with fresh herbs if desired.

Notes

Cut the vegetables into similar sizes for even cooking. You can add spices like paprika or garlic powder for extra flavor. For a sweeter taste, drizzle some honey over the vegetables before roasting.
