Description

A colorful and nutritious side dish made with earthy beets and sweet, creamy sweet potatoes.


Ingredients

  • 2 medium beets
  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Your choice of spices (e.g., paprika, garlic powder)
  • 1/2 cup crumbled feta cheese
  • Fresh cilantro, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the beets and sweet potatoes into chunks.
  3. In a large bowl, toss the beets and sweet potatoes with olive oil, salt, pepper, and your choice of spices.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes or until tender, stirring halfway through.
  6. Once done, remove from the oven and garnish with crumbled feta and fresh cilantro before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Add honey or maple syrup for a sweeter flavor.
