A colorful and nutritious side dish made with earthy beets and sweet, creamy sweet potatoes.
Ingredients
- 2 medium beets
- 2 medium sweet potatoes
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Your choice of spices (e.g., paprika, garlic powder)
- 1/2 cup crumbled feta cheese
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the beets and sweet potatoes into chunks.
- In a large bowl, toss the beets and sweet potatoes with olive oil, salt, pepper, and your choice of spices.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until tender, stirring halfway through.
- Once done, remove from the oven and garnish with crumbled feta and fresh cilantro before serving.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. Add honey or maple syrup for a sweeter flavor.
