Ingredients
- 1 lb fresh Brussels sprouts, trimmed and halved
- 1 lb beef (sirloin, ribeye, or flank steak works best)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp fresh thyme or rosemary (optional)
- 1 tbsp balsamic vinegar (optional, for drizzle)
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast for 20–25 minutes, stirring halfway, until golden brown and crisp on the edges.
- While sprouts roast, season beef with salt, pepper, and garlic. Cook in a skillet or grill pan until desired doneness (medium rare to medium recommended). Rest for 5 minutes.
- Slice beef and serve alongside roasted Brussels sprouts. Drizzle with balsamic vinegar and garnish with herbs if desired.
Notes
- For extra flavor, add lemon zest or smoked paprika to the Brussels sprouts before roasting.
