Description

A delicious and easy meal combining pasta, meat, and creamy flavors, perfect for busy weeknights.


Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 can (10 oz) Rotel diced tomatoes and green chilies (undrained)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp taco seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Fresh cilantro or parsley (optional, for garnish)


Instructions

  1. Boil the pasta in salted water according to package instructions. Drain and set aside.
  2. In a large skillet, cook the ground beef or turkey over medium heat until fully browned. Drain any excess grease.
  3. Stir in the Rotel tomatoes, heavy cream, taco seasoning, garlic powder, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  4. Add the cooked pasta to the skillet and toss to coat. Stir in the shredded cheddar cheese until melted and creamy.
  5. Top with fresh cilantro or parsley, if desired, and serve hot.

Notes

For a spicier version, use hot Rotel diced tomatoes. Add vegetables like bell peppers, corn, or black beans for extra nutrients.
