Description

Festive Santa Claus Macarons that bring holiday cheer to your dessert table. Perfect for Christmas gatherings and showcasing your baking skills.


Ingredients

  • 100 grams Domino® Golden Sugar
  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams Domino® Powdered Sugar
  • 1 1/2 cups (187 grams) Domino® Powdered Sugar
  • 1 tbsp meringue powder
  • 4 tbsp water
  • 2 drops black gel food coloring
  • 1 drop yellow gel food coloring
  • 1/2 cup (63 grams) all-purpose flour
  • 1/2 cup (113 grams) unsalted butter
  • 1/4 cup (50 grams) Domino® Golden Sugar
  • 1 1/4 cup (156 grams) Domino® Powdered Sugar
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1/2 tbsp milk or heavy cream
  • 1/4 cup (50 grams) desiccated coconut (shredded)


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, mix the almond flour and powdered sugar together.
  3. Whip the egg whites until they form soft peaks. Gradually add the Domino® Golden Sugar and continue whipping until you have a glossy, stiff meringue.
  4. Gently fold the almond flour mixture into the meringue.
  5. Pipe small circles onto a baking sheet lined with parchment paper.
  6. Let them sit for about 30-60 minutes until they form a skin.
  7. Bake in the preheated oven for 15-20 minutes.
  8. Combine meringue powder and powdered sugar for the royal icing, add water and mix until smooth.
  9. Use royal icing to create Santa faces on the macaron shells.
  10. Cream together butter and Domino® Golden Sugar until light and fluffy for the buttercream, then mix in powdered sugar, vanilla, almond extract, and milk.
  11. Pipe the buttercream on one macaron shell and top with another.

Notes

Ensure egg whites are at room temperature, sift almond flour and powdered sugar, and be patient while letting the shells form a skin.
