Description
A warm and hearty beef stew that cooks slowly to tenderize the meat and enhance the flavor.
Ingredients
- 2 pounds beef chuck, cut into cubes
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In your Crockpot, combine beef, carrots, potatoes, onion, and garlic.
- In a separate bowl, mix together beef broth, tomato paste, thyme, bay leaf, salt, and pepper. Pour the mixture over the beef and vegetables in the Crockpot.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and vegetables are cooked through.
- Remove the bay leaf before serving. Enjoy your hearty beef stew!
Notes
Brown the beef first for added flavor. Cut vegetables evenly for even cooking. Adjust seasoning as needed and consider adding butter at the end for richness.
