Description

A hearty and comforting beef stew that cooks slowly in a slow cooker, making it perfect for busy days.


Ingredients

  • 2 lbs stew meat
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil


Instructions

  1. In a large skillet, heat vegetable oil over medium-high heat. Brown the stew meat on all sides. Transfer to a slow cooker.
  2. Add the chopped carrots, potatoes, onion, and garlic to the slow cooker.
  3. In a bowl, whisk together the beef broth, tomato paste, thyme, salt, and pepper. Pour over the meat and vegetables in the slow cooker.
  4. Cover and cook on low for 480 minutes (8 hours) or on high for 240 minutes (4 hours), until the meat and vegetables are tender.
  5. Serve hot and enjoy your delicious beef stew.

Notes

For extra flavor, add a splash of red wine to the broth mixture. You can also use frozen vegetables instead of fresh for a quicker option.
