A hearty and comforting beef stew that cooks slowly in a slow cooker, making it perfect for busy days.
Ingredients
- 2 lbs stew meat
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
Instructions
- In a large skillet, heat vegetable oil over medium-high heat. Brown the stew meat on all sides. Transfer to a slow cooker.
- Add the chopped carrots, potatoes, onion, and garlic to the slow cooker.
- In a bowl, whisk together the beef broth, tomato paste, thyme, salt, and pepper. Pour over the meat and vegetables in the slow cooker.
- Cover and cook on low for 480 minutes (8 hours) or on high for 240 minutes (4 hours), until the meat and vegetables are tender.
- Serve hot and enjoy your delicious beef stew.
Notes
For extra flavor, add a splash of red wine to the broth mixture. You can also use frozen vegetables instead of fresh for a quicker option.
