Description
A bright and soft slow cooker chicken dish with lemon and herbs, served over warm, fluffy rice.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups chicken broth
- 2 cups cooked rice
- Chopped fresh parsley for garnish
Instructions
- In a slow cooker, mix lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Add chicken breasts to the slow cooker and coat with the mixture.
- Pour in the chicken broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
- Shred the chicken using two forks, mixing it back into the sauce.
- Serve the chicken over fluffy rice and garnish with fresh parsley.
Notes
Use fresh lemon juice for the best flavor. Trim fat from chicken for a milder broth.
