Description

A bright and soft slow cooker chicken dish with lemon and herbs, served over warm, fluffy rice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 cups cooked rice
  • Chopped fresh parsley for garnish


Instructions

  1. In a slow cooker, mix lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Add chicken breasts to the slow cooker and coat with the mixture.
  3. Pour in the chicken broth.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  5. Shred the chicken using two forks, mixing it back into the sauce.
  6. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

Use fresh lemon juice for the best flavor. Trim fat from chicken for a milder broth.
