Description

A comforting and nutritious vegetable soup that is easy to make and perfect for any time of year.


Ingredients

  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: cooked pasta or rice


Instructions

  1. In a large pot, heat a little oil over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the broth and add the diced tomatoes, green beans, thyme, salt, and pepper.
  5. Bring to a boil, then reduce the heat and let simmer for 20-25 minutes.
  6. If adding pasta or rice, include it in the last 10 minutes of cooking.
  7. Serve hot.

Notes

Feel free to mix in any vegetables you have at home. Adjust the seasoning to your taste, adding a squeeze of lemon juice for brightness.
