A comforting and nutritious vegetable soup that is easy to make and perfect for any time of year.
Ingredients
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: cooked pasta or rice
Instructions
- In a large pot, heat a little oil over medium heat.
- Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Pour in the broth and add the diced tomatoes, green beans, thyme, salt, and pepper.
- Bring to a boil, then reduce the heat and let simmer for 20-25 minutes.
- If adding pasta or rice, include it in the last 10 minutes of cooking.
- Serve hot.
Notes
Feel free to mix in any vegetables you have at home. Adjust the seasoning to your taste, adding a squeeze of lemon juice for brightness.
