Delicious strawberry cheesecake bars featuring a creamy texture and a crunchy graham cracker crust.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons sugar
- 2 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture firmly into the bottom of a greased 9×9-inch baking dish.
- In another bowl, beat cream cheese until smooth. Add sugar and vanilla, mixing well.
- Add the eggs one at a time, mixing until just combined.
- Gently fold in the chopped strawberries.
- Pour the cream cheese mixture over the crust in the baking dish.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool completely before cutting into bars.
- Serve chilled and enjoy!
Notes
For a sweeter twist, consider adding caramel or using different berries like blueberries or raspberries.
