Description

Soft and sweet cookies featuring a delightful cream cheese filling and a strawberry jam center, perfect for sharing.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup homemade or store-bought strawberry jam


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. In a separate bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
  6. Scoop tablespoons of dough onto a baking sheet lined with parchment paper, making a small indent in the center of each cookie.
  7. Fill the indent with a spoonful of strawberry jam.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve at room temperature with a glass of milk or cup of tea. For best taste, let the cookies warm to room temperature before eating.
