Description

A creamy and bright strawberry cheesecake made with fresh berries and a crisp crust, perfect for parties or snacks.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar (for strawberries)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a mixing bowl, beat cream cheese until smooth. Add sugar and vanilla extract, and mix until combined.
  4. In a separate bowl, whip heavy cream until stiff peaks form, then fold into cream cheese mixture.
  5. Pour cream cheese mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes until set.
  7. Once cooled, chill in the refrigerator for at least 4 hours or overnight.
  8. Before serving, mix sliced strawberries with sugar and let sit for 10 minutes.
  9. Top the cheesecake with the sweetened strawberries and serve.

Notes

Use room temperature cream cheese for a smooth mix. Chill the cake well before adding the strawberries.
