Description

A delightful dessert combining rich chocolate and fresh strawberries, perfect for celebrations.


Ingredients

  • 500 g strawberries (fresh or frozen)
  • 50 g granulated sugar
  • 1 tablespoon water
  • 190 g all-purpose flour
  • 75 g natural cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)


Instructions

  1. Make the Strawberry Jam: In a small pot, mix 500 g of strawberries with 50 g of granulated sugar and 1 tablespoon of water. Cook over medium heat until the strawberries break down and the mixture thickens slightly (10-15 minutes). Remove from heat and let cool.
  2. Prepare the Chocolate Cake: Preheat your oven to 180°C (350°F). Grease and flour two 9-inch round cake pans. In a bowl, whisk together 190 g of flour, 75 g of cocoa powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
  3. In another large bowl, mix 115 g of melted butter, 100 g of light oil, 100 g of granulated sugar, and 100 g of brown sugar. Add 2 eggs and mix well. Gradually pour in 330 g of milk and stir until combined.
  4. Combine the dry and wet ingredients, mixing until smooth. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  5. Make the Strawberry Cream Cheese Frosting: In a bowl, beat 250 g of cream cheese and 115 g of softened butter until creamy. Gradually add in 100 g of powdered sugar, 70 g of strawberry jam, and 1 teaspoon of vanilla extract. Mix until smooth. Stir in 200 g of finely diced strawberries.
  6. Assemble the Cake: Place one cake layer on a serving plate. Spread a generous layer of frosting over the top. Add the second cake layer and frost the top and sides. Decorate with halved strawberries.

Notes

Ensure all ingredients are at room temperature for better mixing. Don’t overmix the batter for a lighter cake.
