Description

A light and fresh pudding made with chia seeds, almond and coconut milk, topped with chopped strawberries. Perfect for breakfast, a snack, or a light dessert.


Ingredients

  • 1 cup almond milk
  • 1/2 cup coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey (optional)
  • 1 cup fresh strawberries, chopped
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. In a bowl, whisk together almond milk, coconut milk, chia seeds, maple syrup or honey, vanilla extract, and salt. Stir until well combined.
  2. Let it sit for about 5 minutes and then stir again to prevent clumping.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight.
  4. Spoon the pudding into small bowls or jars.
  5. Top with more chopped strawberries and optionally add coconut flakes or a drizzle of honey.
  6. Serve cold for the best taste.

Notes

Stir the pudding before eating if it looks thick. Can keep in the fridge for up to 4 days.
