Description

Delightful cookies combining soft textures with a beautiful crunch, thanks to freeze-dried strawberries and crushed cookies.


Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed freeze-dried strawberries
  • 1 cup crushed cookies (like vanilla wafers or graham crackers)
  • 1/2 cup mini chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed mixture until well combined.
  6. Fold in the crushed freeze-dried strawberries, crushed cookies, and mini chocolate chips (if using).
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for about a week. Freeze for up to three months.
