Ingredients
- 8 ounces pasta (any type)
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese, for serving (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
- Stir in the fresh spinach and cook until wilted.
- Combine the cooked pasta with the spinach and tomato mixture.
- Season with salt and pepper to taste.
- Serve warm, topped with Parmesan cheese if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or stovetop, adding a little olive oil or water to avoid dryness.
