Description

Ingredients

  • 1 lb Italian sausage
  • 2 cups vegetables (such as carrots, celery, and onion)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 cans (15 oz each) canned white beans (like cannellini or great northern)
  • 2 cups fresh spinach
  • 4 cups broth (chicken or vegetable)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery, and sauté until softened.
  3. Add garlic and Italian sausage, breaking it up as it cooks until browned.
  4. Stir in herbs and spices.
  5. Pour in broth and bring to a simmer.
  6. Add white beans and cook for about 10 minutes.
  7. Stir in fresh spinach just before serving until wilted.
  8. Adjust seasoning to taste and serve hot.

Notes
