Ingredients
- 1 lb Italian sausage
- 2 cups vegetables (such as carrots, celery, and onion)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cans (15 oz each) canned white beans (like cannellini or great northern)
- 2 cups fresh spinach
- 4 cups broth (chicken or vegetable)
- 2 tbsp olive oil
- 3 cloves garlic, minced
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery, and sauté until softened.
- Add garlic and Italian sausage, breaking it up as it cooks until browned.
- Stir in herbs and spices.
- Pour in broth and bring to a simmer.
- Add white beans and cook for about 10 minutes.
- Stir in fresh spinach just before serving until wilted.
- Adjust seasoning to taste and serve hot.
