Description
A classic dessert combining rich chocolate cake, cherries, and cream, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) Morello cherries, drained and juice reserved
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract (for cream)
- Chocolate shavings (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Mix on medium speed for 2 minutes.
- Stir in the boiling water (the batter will be thin).
- Pour the batter into the prepared pans.
- Bake for 30-35 minutes until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove them to wire racks to cool completely.
- Once cooled, slice each cake in half horizontally.
- In another bowl, whip the cream with powdered sugar and vanilla extract until stiff peaks form.
- Place one layer of cake on a serving plate.
- Spread some cherry juice over this layer, followed by cherries and whipped cream.
- Add the next layer of cake and repeat until all layers are stacked.
- Frost the top and sides with the remaining whipped cream and garnish with chocolate shavings.
- Refrigerate before serving.
Notes
Make sure all your ingredients are at room temperature. For extra moisture, brush the cake layers with cherry juice.
