Delicious chicken enchiladas made quickly with simple ingredients, perfect for busy nights.
Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) enchilada sauce
- 8 small corn or flour tortillas
- 1/2 cup diced onions
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, half of the cheese, onions, cumin, garlic powder, salt, and pepper.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
- Repeat with the remaining tortillas.
- Pour the rest of the enchilada sauce over the rolled-up tortillas and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 20-25 minutes until heated through and cheese is bubbly.
- Garnish with chopped cilantro if desired and serve warm.
Notes
Use rotisserie chicken to save time. Feel free to add veggies like bell peppers or corn for extra flavor. For a spicier kick, add diced jalapeños or hot sauce to the filling.
