Description

Delicious chicken enchiladas made quickly with simple ingredients, perfect for busy nights.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) enchilada sauce
  • 8 small corn or flour tortillas
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, half of the cheese, onions, cumin, garlic powder, salt, and pepper.
  3. Spread a little enchilada sauce on the bottom of a baking dish.
  4. Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled-up tortillas and sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes until heated through and cheese is bubbly.
  8. Garnish with chopped cilantro if desired and serve warm.

Notes

Use rotisserie chicken to save time. Feel free to add veggies like bell peppers or corn for extra flavor. For a spicier kick, add diced jalapeños or hot sauce to the filling.
